"Nebbiolo of course! From Boca, Barolo, Barbaresco and Bramaterra primarily, as these small DOCs produce some of the finest wines on earth. The nuances from each pair perfectly with a hearty steak or just a happy day."

"Almost any 2008 Barbaresco and our Morrocan Spiced Braised Lamb Belly with Minted Apple Chutney. Or the most recent release of Emilio Rojo Ribeiro Blanco and the juiciest Half Roasted Chicken you've ever had, straight out of our wood burning oven and served with Heirloom Tomato Bread Salad."
